Meals Kids Love: Donna Shenk from Another New Season

Today’s Meals Kids Love post comes from a new friend, a “real life” friend, which is so precious in this blogging world.  I introduce to you the Lovely Donna Shenk, who I met at the Relevant Conference last fall.  Donna is the woman behind the blog Another New Season, a great blog that your reader should not be without.  This woman is an encourager folks… you know what I mean?  Anytime I was with her during the conference, I walked away in a better mood than I started out in.  She has a great recipe for us today…

Meals Kids Love – Shrimp Burritos

Ingredients:

1 lb frozen shrimp peeled, and deveined – You can subsititue chicken or skip if you prefer vegetarian

Butter or oil ( We recently started using coconut oil)

1 can Pinto Beans (or 1 1/3 cup )

1 can Black Beans (or 1 1/3 cup)

1 can of tomato sauce with green chilis

Recaito – Goya makes this, a cilantro based seasoning ( a mix of cilantro, green pepper, onion, garlic & olive oil) – very cheap in the Mexican section of your grocer.

3 cups rice – I was efficient (um, lazy) and used frozen steamable rice

Tomatoes, Avocado, Lettuce, Sour Cream, Salsa

Other toppings you like

Instructions:

1. In a medium pot mix beans with 2-3 TBS Recaito (I love this stuff!), salt and pepper to taste. Simmer for 15 – 20 minutes.

2. While the beans are simmering; saute shrimp and butter or oil in a saute pan for 2-3 minutes until they just begin to curl.

3. Move shrimp to a medium pot, add tomato sauce, and 3 TBS Recaito. Simmer for 10 minutes.

4. Cook rice – we add fresh cilantro sometimes.

5. Warm tortillas – we always use a damp cloth to cover a plate of tortillas and warm in the microwave.

6. Make your burritos.

7. Enjoy!

Thank you, Donna, and kudos to you for using coconut oil!  I have been using it for awhile now, as a substitute in much of my cooking.  The thing I love about it is how well it keeps foods from sticking!  It also gives food a great subtley sweet flavor… love it!  Try it out and you won’t be sorry.  It has so many uses.


I’m seeing that some of you have been trying these recipes out and really loving them… YAY!  I’m so glad to hear that.  I’ve got my slow cooker chicken in the crock pot right now and it smells GOOOOOOOOD!
