You know those recipes that you use over and over and over again, because they’re easy and your kids will eat them? I know you have them, we all do. Tortilla Pizza is one of those recipes in our family. I cannot tell you how many tortillas our family has consumed over the last few months. If I had actually kept count I’m sure I would be quite alarmed! Tortillas are just so easy! You can use them for pizza, burritos, wraps, quesadillas, and most kids love them.
You have a lot of options with tortilla pizza. My kids like them with turkey pepperoni, pizza sauce, and mozzarella cheese, but you can be more creative. What about pesto, garlic, rotisserie chicken, and cheese? Or barbeque sauce, chicken, pineapple, and cheese? Sometimes I just like a little bit of pesto and cheese and that’s it.
I use a double griddle to make our pizzas, which is great in the summer, because I don’t have to use the oven, which tends to heat up our teeny tiny kitchen. First I lightly toast one side of the tortilla on the griddle, then flip it over and add the toppings. When the cheese has melted it’s ready! Could it get any easier?
