Kiwi and Creme Popsicles.

I love kiwi!  It’s one of my favorite summer fruits.  I thought I’d pair kiwi with one of my other favorite summery things- popsicles.  They are a match made in heaven, let me tell you!  Here’s how to make refreshing Kiwi and Creme Pops.

There are two parts to this popsicle recipe… the kiwi and the creme.  

For kiwi puree
7-8 kiwi fruit
1/3 cup sugar

1/3 cup water

Peel and quarter the kiwi fruit…

Puree kiwi in a food processor or blender…

Bring sugar and water to a boil in a small saucepan.  

Allow to cool, then combine with the kiwi puree.

For the creme

1/2 cup sugar
1 cup low fat greek yogurt

1 cup heavy cream

Whisk together sugar, yogurt and cream.

To make the popsicles
  • Pour a layer of creme mixture in the bottom of the popsicles mold, cover and put in the freezer to freeze.
  • Add a layer of kiwi puree and partially freeze, until it is firm, but not solid.
  • Insert the popsicle sticks 2/3 of the way into the kiwi, or until they hit the solid creme layer.
  • Repeat the creme layer, filling just short of the top of the mold.  Freeze completely.
