I love kiwi! It’s one of my favorite summer fruits. I thought I’d pair kiwi with one of my other favorite summery things- popsicles. They are a match made in heaven, let me tell you! Here’s how to make refreshing Kiwi and Creme Pops.
There are two parts to this popsicle recipe… the kiwi and the creme.
1/3 cup water
Peel and quarter the kiwi fruit…
Puree kiwi in a food processor or blender…
Allow to cool, then combine with the kiwi puree.
For the creme
1 cup heavy cream
Whisk together sugar, yogurt and cream.
- Pour a layer of creme mixture in the bottom of the popsicles mold, cover and put in the freezer to freeze.
- Add a layer of kiwi puree and partially freeze, until it is firm, but not solid.
- Insert the popsicle sticks 2/3 of the way into the kiwi, or until they hit the solid creme layer.
- Repeat the creme layer, filling just short of the top of the mold. Freeze completely.
