A Summer Filled With Orange Creamsicle Waffles.

Everyone has that one dessert. There is always one dessert that reminds them of what it was like to be a kid when summers seemed to last forever and you were almost ready to go back to school. Memories of swimming pools and sunburns spring to mind as if they were yesterday – weren’t they? Summers when you spent all day outdoors and practically ran down the street before the sun was completely gone and you would be in trouble if you weren’t in the house. Those beautiful summers when you felt like you would turn into a fish you swam so much.

The Orange Creamsicle does that to me. Every time I taste it I feel like I’m transported back to a kid in Florida. So to capture a little bit of my youth I created this recipe for fun weekend breakfasts. Make it during the summers or in the winters when you long for warmer weather. For me it will always be a way to remember those carefree summer days and look forward to a time when my daughter get’s to experience them as well.


Orange Creamsicle Waffles

2 cups self-rising flour

2/3 Cup sugar

2 large eggs

2 Cups buttermilk

1/3 Cup vegetable oil

2 tsp orange flavoring

1 tsp vanilla


Orange Cream Sauce

2 tsp vanilla

3 cups orange juice (no pulp)

2 tbsp heavy cream

1 tbsp cornstarch

2 tbsp water

1/3 cup sugar

For the waffles: heat up your waffle iron. In a pourable mixing bowl (or just a regular one and use a ladle) add all the ingredients and mix with a whisk until smooth. Pour into your waffle maker and cook according to its instructions. For the sauce add the orange juice into a saucepan on medium high heat for about 10 minutes. Add the sugar and vanilla. In a separate small bowl add the water and cornstarch and mix until completely smooth. Add the cornstarch mixture and stir constantly until you get a slightly thickened consistency. Add the heavy cream to finish it off. Pour over your waffles and enjoy.
